Our Tasmanian Story

In 2013 Matt & I were both working corporate jobs working long hours, earning large salaries but we were both unfulfilled and thought that we should work this hard but for ourselves.

They say that when you die your life flashes before your eyes and we wanted to make sure that our life was worth watching!!

So we started our quest to find the right business for us. We had always loved great food and drink so started looking at Olive farms, Relish businesses, Cherry & Apple farms but just couldn’t find the business that put that fire in our bellies. 3 yrs of looking and we were still working in corporate world.

Then in Nov 2016 we took a trip to Tasmania to learn the art of distilling spirit and on Day 1 we were with Stephen Brooks at Captain Blighs in Hobart making the whisky wash and we immediately knew that this is what we wanted to do, so we sat in Salamanca that evening and came up with our business name, product names and our dream was born, this was our future.

So after 3 years of planning in late 2019 we finally leapt off the corporate bus selling everything that we had ever owned and headed to Tasmania in our Ute with our rooftop tent and the money in the bank to find the right spot to build our boutique distillery after 4 laps, 12.5K klms and 200 properties Alchymia Distillery finally found its home, on the rugged coast of NW Tasmania at Table Cape, great water, great views, amazing people, enough space to grow some barley for our single malt whisky and a beautiful 150yr old shed that we could convert into our distillery… This is where we now create small batch, handcrafted premium spirits, using the finest ingredients that Tasmania has to offer.

Making everything on site, for our Single Malt Whisky we grist, mash, ferment, distil, mature, bottle and sell it all on site.  Alongside our Single Malt Whisky we also make a selection of Gins & our Vodkas are made as a by-product of our Whisky as we have a combination still. We also make Coffee liqueur and Limoncello and we are about to embark on a Rum (Thanks Captain Blighs for the lesson) !!

The Tasting Room and Distillery are Open to the Public Friday- Sunday 12-4pm where we offer behind the scenes tours with Co-Owner & Head Distiller Matt he will explain how we make our whisky and our other spirits all here on site. You can then do a tasting in our beautiful tasting room and I (Sarah) will share our Tasmanian story with you.
