Hello Spirit Lovers,

 A quick update on what’s been happening here at the Distillery on the beautiful NW Coast of Tassie! 

We have to confess that we took June off!! 3yrs after buying the property we decided that we needed to take sometime to …. well work!! Starting down in Hobart our busman’s holiday took us around a number of new distilleries and then we met the Premier Jeremy Rockcliffe at the launch of the new Tasmanian Distilled Spririts Blueprint,  in which our distillery is noted!! 

We then did a flying visit to SA and managed to catch up with an old friend and secure some AMAZING fortified wine casks which will mature some very special Whisky for us in the coming years,  with a whistle stop down to Melbourne then back to Hobart to collect some Ruby Port casks and the finale up in Devonport for the WxNW Tourism Conference where we met Jamie Durie to discuss all things Tourism based on Table Cape, we are very excited about his new development and we think it will be a great opportunity to put NW Tassie firmly on the map!

While away we have decided that we are going to build a pizza oven (hopefully ready for the end of Oct) so at the weekends during the summer we will be lighting the pizza oven every weekend for freshly made woodfired pizzas using our flour from our barley in the bases, so we have been making test bases and trying to get the toppings right over the last 5 weeks as you can imagine for MPH this is a real chore!! He loves Pizza! So we’ve got lots of work to do to to make this happen we have to move the bond store, build a kitchen prep area and then build a woodfired pizza oven .watch this space … we will let you know once it is built and tested and ready to fire up!!

Tasmanian Whisky Week

Monday Aug 7th – Sunday 13th 

We will be joining Hellyers Road and Sandy Gray Distilling at Mount Gnomon Farm on Saturday night 12th August for the ‘Distillers Dinner’. The chef is paring each course with a the featured spirit, we will be brining our Chilli Vodka & Coffee Liqueur, Hellyers their Whisky and Sandy Gray are bringing their Winter Gin we think it will be a great event and our last Tas Whisky week without Whisky!! Next year it will be back on!!

We’ve released our summer dates on facebook check them out with live music and of course wood fired pizza’s at least once a month from Oct get the diary out and lock them in now!! 

Permission to Trespass (PTT) Festival of Events for the Off Season

July saw ourselves and 4 other local tourism based businesses launch the inaugural event for the Offseason here in Wynyard and Table Cape called ‘Permission to Trespass’ a series of behind the scenes events.  The final numbers are in and over 1600 tickets were sold and the events were a great success with proof of concept firmly ticked we are talking to Events Tas to do it again next year! The headline event was the lightshow at the Table Cape Lighthouse ‘Tunapri’ which could only be described as stunning!

‘The Distillers Bench’ @ Alchymia Distillery 

‘The Distillers Bench’ is a unique and intimate behind the scenes experience in a small batch Whisky Distillery you will get the chance to watch the head distiller MPH ‘mashing in’ the Whisky Wash from the ‘Distillers Bench’ (the first part of the process to making Whisky) while hearing the story of the whole process and his journey to becoming a distiller here in Tasmania. 

During the experience you will get to taste 3 x new make spirits of different ages and 1x Whisky so that you can taste the journey that new make spirit goes on to becoming Whisky once it is casked. A light lunch of local produce is also included.  Please Allow 4-4.5 hours for the experience.

Limited to 4 seats per session $195 pp

The Launch of Experiences @Alchymia Distillery

MPH and I always said “we aren’t building a legacy we are building an experience” so the winter has seen the launch of the remaining experiences designed by MPH and I over the last 6 years our unique and intimate experiences here at the distillery there is something for everyone who loves great spirits and wants to learn more, allowing people to see behind the scenes and get to share just a little bit of our passion !!

Alchemists Academy ‘Cask Experience’ Private Cask ownership

Alchymia Distillery launched this experience last year and it has been more popular than we could ever have hoped for. Offered on a strictly limited release of only 100ltrs per month, the opportunity for you to own your own cask of single malt single cask whisky in 30Ltr 50 Ltr or 100Ltr denominations. This is for the true whisky enthusiast, as the ‘Cask Experience’ means that you will get the opportunity to go on the journey with your whisky, from making the wort, into fermentation and then into the still, tasting it throughout the maturation process & finally putting it into bottles for you to enjoy. You decide when it is ready and can name and label your own whisky, which you can then enjoy selfishly or share with family & friends! We already have bookings for 2024 and 2025 so if you are interested in joining the Alchemist Academy Private Cask Experience family then please call Sarah to understand the leadtime.

‘The Gin Station’ @ Alchymia Distillery 

Alchymia Distillery are launching ‘The Gin Station’ You are invited to join the distiller at his Gin station and understand the process of making Gin ‘one shot’ style. 

Look smell and touch the botanicals that we use when making our range of Gins here on site. 

Then be guided through a tasting of 3 of our Gins. $45pp allow 1.5 hours

‘Let the Celebrations beGin’

Do you have a special day or celebration coming up? Love Gin? Alchymia Distillery invite you to create your own recipe Gin for your special day!! Imagine being able to share your very own Gin with your guests on your Wedding day or Special Birthday!!  

This experience offers an initial consultation with the head distiller to discuss your flavour profile and botanicals.  He will then produce 3 recipes for you to come back and taste and choose from….We will then produce, label and seal 10 x bottles of your favourite recipe ready for your big day!!  Oh and you get to name your creation and this name will appear on your handwritten labels !! $1250 

‘Create your own bottle of Gin’

We invite Gin enthusiasts to make their own single bottle of Gin here on site you can join the distiller for 4 hrs and create your very own Gin recipe. You will be guided through botanical selection and then make your recipe then take a 500ml bottle of your Gin away with you on the day!  $195 pp allow 4 hours.
